coconut!

Coconut could be the new miracle food. That’s the message in the alternative health press. I am using some coconut products that I really enjoy:

Coconut oil (solid below 75-degrees F): Coconut Pacific Extra virgin coconut oil (certified organic) from the South Pacific Trading Company (www.nonipacific.com) to learn more.  I discovered this at Groton Dental Wellness in Groton, Mass where Drs. Evans and Nordin-Evans offer a unique, holistic approach to dental health.

OR Whole Foods 365 brand Virgin Coconut Oil sold in 14-oz jars. Stable at high temperatures, coconut oil is great for cooking. Or spread it on toast or oatmeal or wherever you use butter (or would like to).

Has high levels of lauric acid, found in mother’s milk. As medium chain triglycerides (MCT) coconut oil converts to energy without circulating in the blood stream as fat. Helps maintain normal cholesterol levels. No trans fatty acids, no hydrogenated fats. (I have taken this info from the Coconut Pacific label. Coconut Pacific coconut oil has no coconut fragrance.)

Coconut Vinegar (raw) by Coconut Secret, discovered at Whole Foods. Made from raw coconut sap from coconut blossoms. Very low glycemic, a source of 17 amino acids, minerals, vitamin C, and B vitamins. Enzymatically alive, aged 8-12 months. Has FOS, a prebiotic that promotes digestive health. Like coconut oil, coconut vinegar can be used for skincare or personal cleansing. Coconut vinegar makes a lovely vinaigrette for a green salad. It is fragrance-free and is the color of honey.
